You all know that I LOVE chickpeas as a more nutritious alternative to flour in snack recipes.
I mean, they contain protein, fiber, and a lot of phytonutrients that allow you to feel good about giving your kids treats, plus they’re mild tasting enough to be overpowered by the sweeteners and flavorings of your cookie dough.
It’s a perfect match! All you need is a food processor or some type of blender to get your chickpeas smooth and voila! dessert is done.
I know there’s a lot of resistance among the minimalist and modern crowds to getting kitchen appliances like a food processor, but I’ll be honest, besides the instant pot, it’s the number one most used tool in my kitchen.
I’m lucky that this particular processor that you see in the video below was a wedding give (and still going strong after all these years!), but even if it hadn’t been, buying one would have been well worth the investment, and I have every intention of getting a replacement if this one ever kicks the bucket.
But back to the cookie dough bites. As much as I already knew I loved chickpeas, and have used them to make healthy chocolate chip cookie dough bites on many occasions, even I was surprised by how good these were!
Mixing some good old fashioned cocoa powder, and peppermint essential oil into the batter totally kicked the flavor up a notch, and not only did the kids eat them up, but even my husband fought for his share, which is a rare occurrence with desserts.

Healthy Double Chocolate Peppermint Cookie Dough Bites
Ingredients
- 1 can (1 1/2 cups) cooked, drained chickpeas
- 1/3 cup honey, maple syrup, or agave nectar (I prefer agave in this recipe for its mild taste)
- 1/4 cup cocoa powder
- 1 Tablespoon coconut flour
- 1/4 teaspoon salt
- 2 drops peppermint vitality essential oil
- 1/2 cup mini chocolate chips (I got mine at aldi, but you can get cacao nibs here)
Instructions
- Combine all ingredients except chocolate chips in food processor
- Blend until smooth
- Mix in chocolate chips
- Form into balls
- refrigerate or freeze until ready to eat
- Enjoy!
