Who doesn’t love peanut butter cookies? This simple recipe is so delicious, it will quickly become your favorite!


  • 3/4 cup flour (I use 1/4 cup each of quinoa flour, sorghum flour, and arrowroot powder)
  • 1/2 teaspoon xanthan or guar gum (omit if you’re using a flour mix that already contains it)
  • 1/2 teaspoon baking powder
  • pinch of salt
  • 1/3 brown sugar
  • 1/3 granulated sugar
  • 1/2 cup butter
  • 1/2 cup peanut butter
  • 1 egg
  • 1/2 teaspoon vanilla


  1. Combine flour, xanthan gum (if using), baking powder, and salt, and set aside
  2. Cream sugars and butter until light and fluffy
  3. Add peanut butter, egg, and vanilla and beat until fully incorporated
  4. Beat or stir in flour mixture until fully mixed, but not mixing more than necessary
  5. Drop by the tablespoon onto parchment-lined (or silicone mat-lined) baking sheets with at least 2 inches between each ball
  6. Use a flour-dipped fork to create hashmarks
  7. Bake for 10 minutes until beginning to brown on the edges, but still soft in the middle
  8. Remove from oven and let cool on cookie sheet
  9. Enjoy!
