Gluten Free Meatballs

Ingredients

  • 1 lb ground beef
  • 1/4 cups chopped onion
  • 1/4 teaspoon garlic powder
  • 3/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 egg
  • 1/4 cup oatmeal or gluten free breadcrumbs such as Panko.
  • 2 Tablespoons rice flour

Instructions

  1. Preheat oven to 375º Fahrenheit 
  2. Mix all ingredients together and form into one inch balls. Tip: Use
  3. Tablespoon-sized cookie scoop to make your meatballs
  4. Arrange on a cookies sheet so that meatballs do not touch each other
  5. Bake for 30 minutes until cooked through. 
  6. Remove from cookie sheet using a spatula while meatballs are still hot. (You don’t actually have to remove them so much as unstick them from the pan)
  7. Serve as desired. 
  8. Alternatively, you can fry the meatballs in a skillet. They hold together surprisingly well as you stir them around – just be sure to do it gently.
