Lightened Up Gluten-Free Cheese Sauce

Ingredients

  • 1 cup butternut squash (puréed, or mashed down into the measuring cup with a fork)
  • 1/2 cup chicken broth
  • 1 cup skim milk
  • 1/2 teaspoon onion powder
  • 2 oz. neufchâtel cheese
  • 1 1/4 cups shredded, extra sharp cheddar cheese

Instructions

  1. Heat butternut, chicken broth, and milk in a saucepan until steaming hot, but not boiling
  2. Transfer to a blender, and blend until completely smooth
  3. Add remaining ingredients and blend until smooth
  4. Serve hot as you would any other cheese sauce
  5. Enjoy!

Note: You can also do the entire thing in a sauce pan using an immersion blender. Just add the cheese after blending your butternut and milk, and stir until smooth rather than blending again.
