Gluten-Free Apple Fritters

Ingredients

Scale
  • 1 1/3 cups gluten-free flour mix
  • 1 tbsp sugar
  • 2 tsp baking powder
  • 1/2 tsp guar gum
  • 1/2 tsp salt
  • 1 teaspoon cinnamon
  • 2 eggs, beaten
  • 2/3 cup milk
  • 1 tsp vanilla
  • 22 1/2 cups peeled, cored, and chopped apples

Glaze:

  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla
  • 34 tablespoons water

Instructions

  1. Stir dry ingredients together.
  2. Blend in milk and eggs.
  3. Stir in apples. Note: You will feel like there are way too many apples compared to batter, but believe me, it’ll work!
  4. Drop from tablespoon into deep, hot oil.
  5. Fry until golden, flipping partway through.
  6. Drain on paper towels. Sprinkle with powdered sugar, cinnamon sugar, or glaze.
  7. To make glaze, combine powdered sugar, vanilla, and water until smooth. Dip fritters in glaze, and drain on a cooling grid placed over a cookie sheet to catch drips. 
  8. Serve while warm (if possible)
