Flaky Sourdough Biscuits Recipe

Flaky, light biscuits made with sourdough.
- 2 cups all purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup cold butter
- 165 grams sourdough starter (about 1 cup, active, less if not active)
- 2/3 cup milk
- Preheat oven to 350º
- Combine flour, baking powder, and salt together in a large mixing bowl
- Cut in cold butter until about the size of grains of rice OR grate into flour mixing using a box grater, and then toss flour
- Stir in starter and milk just until a cohesive dough forms
- Roll out on a floured surface to about 3/4 inch thick, and cut out to about 2 1/2 inch round biscuits
- Place on a baking sheet, about 1 inch apart to allow for even heating, and bake about 15 minutes, until lightly golden
- Remove and serve as desired
