Easy Paleo Eggnog

Ingredients

Scale
  • 4 egg yolks
  • 1/3 cup honey or maple syrup
  • 2 cups unsweetened almond milk
  • 1 cup coconut cream (use the top of a can of coconut milk)
  • 1 teaspoon freshly grated nutmeg
  • 1/2 teaspoon ground cinnamon (optional)
  • 4 egg whites

Instructions

  1. Beat egg yolks until fluffy and light yellow
  2. Add honey and continue beating until well mixed
  3. Stir in almond milk, coconut cream, nutmeg, and cinnamon
  4. Beat egg whites until soft peaks form
  5. Whisk into milk mixture
  6. Chill and serve
  7. Enjoy!
