1 1/2 pounds of boneless, skinless chicken, split into 3/4–1 inch thick pieces
2 Tablespoons oil
2 shallots, or 1/4 onion, diced
4 cloves garlic, minced
1/4 cup chicken broth
1/4 cup lime juice
1can coconut milk (NOT the refrigerated kind! This needs to be the can, with the thick cream in it)
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon red pepper flakes
2 Tablespoons cilantro, chopped
Instructions
Heat 1 Tablespoon oil in a large skillet over medium heat
When oil is hot enough to sizzle when a drop of water hits it, add chicken in a single layer
Cook chicken until golden brown on both sides, and remove from pan onto a plate
Add the second tablespoon of oil to skillet, and stir fry shallot for 2-3 minutes, until soft
Add garlic, and stir fry another 30-45 seconds
Add salt, pepper, red pepper flakes, coconut milk, lime juice, and chicken broth
Stir, scraping the bottom of the pan to deglaze the flavorful bits from the bottom
