Coconut Lime Chicken Recipe

This one-skillet meal is quite simple to make and packed with flavor. It’s a perfect option when you’re wondering what to make with the chicken you have on hand. 

Ingredients

  • 1 1/2 pounds of boneless, skinless chicken, split into 3/41 inch thick pieces
  • 2 Tablespoons oil
  • 2 shallots, or 1/4 onion, diced
  • 4 cloves garlic, minced
  • 1/4 cup chicken broth
  • 1/4 cup lime juice
  • 1 can coconut milk (NOT the refrigerated kind! This needs to be the can, with the thick cream in it)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes
  • 2 Tablespoons cilantro, chopped

Instructions

  1. Heat 1 Tablespoon oil in a large skillet over medium heat
  2. When oil is hot enough to sizzle when a drop of water hits it, add chicken in a single layer
  3. Cook chicken until golden brown on both sides, and remove from pan onto a plate
  4. Add the second tablespoon of oil to skillet, and stir fry shallot for 2-3 minutes, until soft
  5. Add garlic, and stir fry another 30-45 seconds
  6. Add salt, pepper, red pepper flakes, coconut milk, lime juice, and chicken broth
  7. Stir, scraping the bottom of the pan to deglaze the flavorful bits from the bottom
  8. Simmer saut for 5-7 minutes
  9. Add cilantro, and chicken, and heat through
  10. Serve over rice or pasta
