Do you wish you could get your kids to eat more omega-rich fish?

I typically think of my kids as pretty good eaters, but they don’t like fish. Unfortunately for them, I really do like fish and wish we could eat more of it, but for their sake, I’ve gotten creative.

I come from a large family, so I guess it’s no surprise that fresh salmon fillets were out of the budget, but we did love the occasional canned salmon casserole. It was decidedly not gluten-free though, and since my kids are much more fond of hamburgers than any casserole, I decided to experiment with a clean eating version of salmon patties to entice them.

It was a success!

Thanks to salmon’s relatively mild taste, and in my five-year-old son’s opinion, the light crunch of celery, these salmon patties are pretty much a perfect dish to introduce your kids to fish.

These particular salmon patties are unique because instead of using a carb-heavy binder – like saltine crackers – to turn our can of salmon into burgers, we used an egg, yogurt, and a single Tablespoon of coconut flour, which makes them ultra low-carb, and high in protein and good dietary fats.

It doesn’t get much better than that! My family always use to serve salmon with squash casserole, but since summer squash is, well, a summer thing, we served these patties yesterday on a bed of spinach, with roasted potatoes on the side. yum!

Clean Eating Salmon Patties

Instructions

  1. Drain salmon (and reserve the liquid to pour over your dog’s dinner!) and place in a mixing bowl
  2. Sauté onions and celery in butter until onions become translucent and celery loses most of its crunch
  3. Scrape onions and celery into mixing bowl with the salmon
  4. Add remaining ingredients and stir well
  5. Heat a skillet over medium heat, and oil liberally with olive or coconut oil
  6. Measure out 1/3 cup of salmon mixture and shape into a round patty about 1/2 inch thick
  7. Repeat with remaining mixture
  8. Fry on one side util golden brown, flip, and fry second side
  9. Remove from heat and let rest – resting helps patties hold together – for five minutes before serving.
  10. Enjoy!

  2. Just wondering if these would freeze well. I would like to make them in large batches and freeze to grill through the spring and summer.
