1 cup flour
1/2 teaspoon salt
3/4 teaspoon baking powder
1/2 cup butter
1 cup brown sugar
1 egg
2 teaspoon vanilla
2 ripe bananas
3/4 cup chocolate chips
Instructions
Preheat oven to 350ºF
Combine flour, salt, and baking powder in a small mixing bowl, and set aside
In a larger mixing bowl, cream butter and brown sugar together until fluffy
Add egg and vanilla and blend well
Blend in bananas. If you are mixing by hand, it can be helpful to mash bananas before adding. If using an electric mixer, I add the bananas whole and let the mixer do the work
After bananas are well mixed, stir in dry ingredients until just mixed
Stir in chocolate chips, reserving 2 tablespoons
Pour batter into a greased or parchment-lined 8×8 inch baking pan, and top with reserved chocolate chips
Bake in center of preheated oven for about 35 minutes, until brown on top, and a toothpick inserted into center comes out with just a crumb or two clinging to it.
Remove from oven and let cool for 15 minutes before removing from pan
