Apple pie Quesadillas

Try this sweet spin on an easy classic. Apple pie quesadillas are a delicious sweet treat and a family hit.

Ingredients

  • 2 medium-sized apples
  • 1/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 Tablespoons butter
  • 1/3 cups water
  • 6 corn tortillas
  • 1/2 cups powdered sugar
  • 23 Tablespoons water

Instructions

  1. Peel, core, and finely dice apples.
  2. Place in a bowl and toss with granulated sugar, cornstarch, cinnamon, and nutmeg.
  3. Melt butter in a medium-sized skillet over medium heat.
  4. Add apples, and stir-fry for about a minute.
  5. Stir in water while cooking apples through.
  6. The mixture should be thick, but if it gets too thick, add more water.
  7. Heat another ungreased skillet or griddle.
  8. Once it’s hot, place a tortilla on the skillet, and spread one third of the apple pie filling on it.
  9. Top with a second tortilla.
  10. Fry until the bottom is toasted.
  11. Flip, and fry until second side is toasted.
  12. Repeat until all the apple filling is used.
  13. Let quesadillas cool to set up for five minutes or so before cutting – it makes them SO much less messy!
  14. Combine powdered sugar, and 2-3 teaspoons of water to make an icing.
  15. Optionally, you can add 1/2 teaspoon of ground cinnamon to icing.
  16. Drizzle onto quesadilla wedges. Yummy!
