This delicious soup is a great, hearty option for almost any night.

Ingredients

Scale
  • 1 20 oz. bag of Hurst 15 bean soup mix
  • Seasoning packet from bean mix, or 2-3 Tablespoons Tony’s Cajun seasoning
  • 1 ham bone
  • 12 cups chopped ham or smoked sausage (optional, if there’s no meat on the bone)
  • 1 large onion, diced
  • 1 can of diced tomatoes
  • 8 cups water or chicken broth

Instructions

  1. Place ham bone in a large (6 quart) pot
  2. Add remaining ingredients, covering with water or chicken broth
  3. Cover and bring to a rapid boil over medium-high heat
  4. After 10 minutes, reduce heat, bringing beans to a low boil
  5. Continue to boil for about 90 minutes, until beans are tender
  6. Remove ham bone from pot to a platter or dish to cool
  7. When bone is cool enough to handle, pick off meat, and add back to pot
  8. If the bone has no meat, or not enough meat on it, you can optionally add 1-2 cups of chopped ham
  9. Stir meat back into soup, remove soup from heat, and serve
  10. Enjoy!
