Clean Eating Breakfast Frittata
This clean eating breakfast frittata is perfect paired with fruit for the best spring breakfast for brunch you can think of!
When we went on the Whole30 a few months ago, breakfast was a pretty big challenge for us. While I simply didn’t eat breakfast, I simply made oatmeal or grits for the kids as a sort of let’s-get-this-out-of-the-way meal.
I knew it wasn’t the most nutritious thing, but it’s what they really, really loved.
So enter the Whole30, and suddenly, we’re putting plates of eggs and vegetables in front of them first thing in the morning.
Talk about wrinkled noses! The kids just weren’t having it!
We finally settled on mostly sausage, scrambled eggs with sausage, and fried potatoes, later adding “apple pie” sweet potato hash browns.
But frankly, I wasn’t satisfied with merely getting the kids off of their favorite grain-based breakfast foods. I really wanted them to eat more greens.
So I took a risk with this frittata.
And it paid off righteously. Though to be fair, I didn’t think it would at first. my daughter sat in front of her plate and cried for a good 15 minutes before she finally choked down a bite, swearing that it tasted awful.
I let her skip the rest of breakfast, and after she cooled down, she came back, and for some reason, decided to give it an honest try. And she loved it, somehow making me both incredibly frustrated and happy at the same time.
Garrett on the other hand tore into is and ate both his and what was supposed to be mine.
His favorite part was the crispy hash browns on the bottom, and he says he didn’t even taste the spinach. Yay for that!

Clean Eating Breakfast Frittata
If you’re looking for a delicious and healthy breakfast option, you’ll love this healthy frittata!
Ingredients
- 1 small potato, shredded
- 1 cup cooked, crumbled turkey sausage (I make my own using this recipe)
- 6 eggs
- 3/4 cup spinach leaves
- 1/2 teaspoon onion powder
- a pinch of garlic powder
- Salt and pepper
- 2 teaspoons light tasting olive oil, or refined coconut oil
Instructions
- Preheat oven to 350º
- Heat oil in a 6-8 inch cast iron skillet
- Spread potatoes evenly in bottom of skillet and pack down a bit with a spatula
- Fry until potatoes begin to brown on the bottom
- Layer sausage and torn spinach over potatoes
- Scramble eggs and pour over the top
- Move skillet to the oven and bake for 15 minutes until eggs are set.
- Remove from oven, slice, and serve.
- Enjoy!
