Berry Parfait Popsicles Recipe

 If you’re looking for a super tasty but easy summer treat, look no further! These berry parfait popsicles will hit the spot for kids and adults alike!

My kids are infatuated with popsicles. I mean, most kids are, though, right?

But I’m pretty emphatic about making sure their treats are on the healthy side. In fact, most of the time, all I do is repackage a normal snack into the appealing shape of a popsicle, a la these sturdy popsicle molds.

For some reason, holding your yogurt and berries on a stick seems to make it taste better. Who knew?

Not just good for you, they taste good too

But I have to admit, these berry parfait popsicles were pretty tasty with wild blueberries and honey-sweetened strawberries and yogurt all layered together.

Truth be told, I was trying to make them striped, but they swirled together a little bit of their own accord. I guess that was partially a result of use using frozen (and thawed) frozen berries, which tend to be a bit more watery than fresh berry puree.

I’m super happy with how pretty they turned out, though. And guess what? Frozen berries are typically cheaper than fresh ones, so it’s a score!

Berry Parfait Popsicles Recipe

A simple summer treat that’s healthy and good for you. Easy to customize with your personal fruit preferences!

  • Cook Time: 3-4 hours (or until frozen)
  • Total Time: 3-4 hours

Ingredients

Scale
  • 1 cup blueberries
  • 1 cup strawberries
  • 1 cup plain yogurt
  • 2 Tablespoons honey, divided

Instructions

  1. Blend or mash strawberries and blueberries separately
  2. Mix one tablespoon of the honey wth the strawberries
  3. Mix the second tablespoon of honey with the plain yogurt
  4. Layer berries and yogurt in popsicle molds or dixie cups
  5. insert popsicle sticks and freeze overnight.
  6. So easy!
  7. Enjoy!
